Lake Victor Church of Christ
Today was a good singing day at church. I made me reflect on how fortunate we are at our little congregation to have such a skilled song leader as Loyd Allen. He pitches songs perfectly and keeps the pace steady so we don't drag. He leads us instead of us leading him. Thanks LA for your willingness to lead us so capably.

Sunday Church Dinner
Nelda brought this salad today. It was great, especially with cornbread that someone else brought.
Veggie Salad
2 cans French cut 1 small jar pimento,
green beans drained and chopped
2 cans shoe peg corn 3/4 cup sugar
2 cans small green peas 1/3 cup vinegar
1 cup chopped celery 1/4 cup oil
1/2 cup chopped onions Salt and Pepper to taste
Drain liquid from canned vegetables. Mix sugar, vinegar, oil, salt and pepper for topping. Layer ingredients in a bowl or dish. Pour topping and let stand in refrigerator overnight. Mix gently the next day. It will keep for up to a week in the refrigerator.
This recipe came from the Travis County EE Cookbook by Violet Alexander.

A Sick Day
I took a sick day today because I went for my annual doctor's checkup. This cough I have is probably due to my blood presssure med; however, because there was a very small spot on my lung a year ago, I had a chest xray. There was nothing there but I am to schedule a CT scan soon.
Toi and I went to Barbara Hughes' house in Horseshoe Bay tonight to make some cards. We made two really detailed cards for Fall. Wow what a great house with a great view!

My job is awesome...
.....in that I have opportunities for growth and development that I might not get anywhere else. Yesterday, I represented FLCCT, working with a team of Web developers from PayPal/Ebay in Austin. We are entered into a web site competition being sponsored by Knowbility called AIR - Austin . This Accessible Internet Rally is challenge among non-profits and web design teams.
Team PayPal is composed of Nicole (lead), Jeremy, Carroll and Chuch. We met at theri headquarters on Parmer Lane on the Free Scale campus. PayPal/Ebay have about 300 employees at this sight and the walls and floors and cubicles are done in primary colors like Ebay.
I left with the following mission steps:

www.jott.com
This little program is a to-do list. You can call a number and speak your list. Jott will then translate your voice into a written list that appears on igoogle or in an email. It will even call you back at a later time to remind you what you said. Really cool for someone loosing their memory like me!:)

New Breakfast Casserole Recipes
This week, I made 2 new breakfast casseroles for the D10 Extension Association of Family and Consumer Sciences, who met at our office. We then went to Mueller Central (the old airport) and toured 4 of their row houses. They were beautiful and very well decorated.
Cheesy Bacon-and-Ham Casserole
1/2 pound bacon 1/4 cup butter or margarine
1/2 pound chopped cooked ham 6 large eggs, lightly beaten
3/4 cup quick-cooking grits 1/2 cup milk
1 (16-oz) loaf pasteurized prepared cheese 2 teaspoons baking powder
product, cubed 1/2 teaspoon freshly ground pepper
- Cook bacon in a large skillet until crisp; remove bacon, and drain on paper towels, reserving 1 tablespoon drippings in skillet. Crumble bacon, and set aside.
- Cook ham in reserved drippings in skillet over medium heat until browned.
- Cook grits according to package directions. Remove from heat; stir in cheese and butter until melted. Stir in bacon, ham, eggs and remaining incredients. Pour into a lightly greased 9 x 13-inch baking dish.
- Bake at 350 degrees for 45 minutes or until set. Serves 8.
Brie-and-Sausage Breakfast Casserole
1 (8-ouncd) round Brie* 1 tablespoon chopped fresh or
1 pound ground hot pork sausage 1 teaspoon dried rubbed sage
6 white bread slices 1 teaspoon seasoned salt
1 cup grated Parmesan cheese 1 teaspoon dry mustard
7 large eggs, divided

2 cups fat-free milk
- Trim and discard rind from Brie. Cut cheese into cubes; set aside.
- Cook sausage in a large skillet over medium-high heat, stirring until crumbled and no longer pink; drain well.
- Cut crusts from bread slices, and place crusts evenly in bottom of a lightly greased 9 x 13-inch baking dish. Layer evenly with bread slices, sausage, Brie and Parmesan cheese.
- Whisk toggether 5 eggs, 2 cups whipping cream, and next 4 ingredients; pour evenly over cheeses. Cover and chill 8 hours.
- Whisk together remaining 2 eggs and 1 cup whipping cream; pour evenly over chilled mixture.
- Bake at 350 degrees for 1 hour or until set. 8 to 10 servings
*Substitute 2 cups (8 ounces) shredded Swiss cheese for Brie, if desired.
